This variety of thyme is highly aromatic and known for its strong, sweet flavour. Possibly the best thyme for culinary use.
It produces small pink flowers in summer and it is a key ingredient in Herbes de Provence. Stronger, sweeter and more aromatic than common thyme, however it is less hardy and will need protecting from frost.
Add the leaves or springs of this plant to stews, sauces, salads, pork, sausages, chicken, roast potatoes and marinades.
Plant in poor, well-drained soil in full sun.
