Also known as Mexican tree spinach. A rapid growing plant that should be treated like a cut and come again salad. The tender shoots are tinged with pink and can be eaten raw in salads, melted in butter or steamed and used as a spinach substitute. It also makes a good focal plant in a border; where left uncut it will grow quite tall and eventually flower. Plant in normal garden soil in full sun/part shade.
